Kale Cabbage, Snow Pea, Sweet Potato, Zucchini & Shredded Carrot Salad w/a Red Bean Dressing

Ingredients Salad:

3-5  large kale leaves, finely chopped 
1 cup cabbage, finely sliced 
½ cup snow peas, chopped
1 cup cooked sweet potato, cubed
½  med sized zucchini, cubed 
½ cup shredded carrot 

Ingredients Dressing:

1/4c olive oil
1/4c water 
1/2 can Dijon mustard 
1 Tsp coconut aminos 
salt pepper to taste

Method Dressing:

1. Add all ingredients to a high speed blender, food processor, or hand blender to blend all ingredients until it reaches desired consistency. 

Method Salad:

1. Prepare all salad ingredients and add to a large mixing bowl. 

2. Add dressing to salad and mix until well incorporated as shown above. The salad gets better the longer it marinates in the dressing. 
Keep refrigerated and enjoy within 72 hours.
